20 Years Strong: How We Sparked a National Movement in Houston to Change the Way Children Eat
In 2005, we planted the seeds for a revolution.
Few people were discussing childhood obesity or the need for tested food education in schools. We believed that teaching children to grow, cook, and eat real food—and have fun doing it, could change everything. So we built an evidence-based program from scratch.
With researchers, teachers, chefs, and gardeners at our side, we tested, measured, and refined our approach until we could count on it to change children’s attitudes and behavior about healthy food. We wanted them to eat more veggies and love them. We wanted to break down their resistance to trying new foods. We succeeded. That curriculum became Seed-to-Plate Nutrition Education™, and Houston became our proving ground.
Two Decades Later, Still Leading the Way
Today, as policymakers scramble to fix school food systems and combat rising rates of diet-related disease, Houston stands apart. It remains the first city in America to fully integrate:
- Nutrition education in schools
- Urban farming at scale
- A connected system of community-based food access and education
The rest of the country is finally catching up.
A Proven Model, Two Decades Ahead
Seed-to-Plate Nutrition Education™ is not a pilot or a trend. It’s the original, research-backed curriculum that now serves as a plug-and-play solution for Texas’ 2027 mandate requiring nutrition education through 8th grade.
While federal and state leaders continue debating how to fix food education and access, we offer a model that works—and has worked for twenty years.
Why Houston?
Because Houston was the right place to build a coalition of change agents who didn’t wait for permission.
Together, we created a system that starts in the classroom and extends to the family and entire community:
🌱 In the Classroom
Seed-to-Plate Nutrition Education™ expanded to schools across Houston—and beyond—teaching children how to grow, cook, and enjoy vegetables they learned to love.
🥕 At Home and Work
We launched the VegOut! 30 Ways in 30 Days Challenge, a fun, online healthy eating game. It has since engaged thousands of families, schools, and companies in seven countries.
🚜 On the Farm
Hope Farms, is a 7-acre urban oasis we built in the heart of the city. Here, we:
- Provide fresh produce to underserved neighborhoods
- Train a new generation of farmers and food educators
- Host team-building events, school field trips, and community cooking classes
Houston became a national demonstration site for food system transformation—proof that real food and real strategy can work together.
Looking Ahead: The Future of Food Education Starts Here
Our 20th anniversary isn’t just a celebration—it’s a call to action.
We’re launching our “20 Schools by 2026” initiative to bring Seed-to-Plate to even more campuses and communities across Texas and the nation. We’re also expanding our Affiliate Partner Network and building partnerships with districts, foundations, and donors who believe—like we do—that the future of public health begins with how children experience food.
