Meet Michelle Wallace, a talented Chef, Pitmaster, and Restaurateur originally from St. Louis. Michelle’s journey into the world of food and technique began while studying Healthcare Administration at Texas Southern University, where she discovered her passion for culinary arts. Her time in Houston, with its rich diversity, significantly influenced her approach to food and culture.

With formal training from The Art Institute of Houston and international experiences in China, Michelle honed her skills, blending them with her natural talents to become the innovative culinary force she is today. Starting from the front of the house at Houston’s Restaurant, she worked her way up to management positions, eventually training under the renowned chef Mark Holley at Pesce and cooking for local athletes.

In a pivotal collaboration with veteran Pitmaster Greg Gatlin of Gatlin’s BBQ, Michelle spent over 6 years refining her craft, introducing specialty items like house-smoked pastrami and smoked bologna that captivated customers and critics alike. Her dedication and creativity earned her a nomination for Rising Star Chef by Culture Map Houston in 2021.

Michelle’s culinary prowess led her to television appearances on Netflix’s High on the Hog docuseries and Food Network’s BBQ Brawl, showcasing her talent on a national stage. In 2023, she launched her own venture, B’tween Sandwich Co in Houston, blending diverse culinary techniques to craft comfort food, smoked meats, and traditional fare for sandwich enthusiasts.

Recently, Michelle competed in Bravo’s Top Chef, making her mark in the show’s twenty-first season filmed in Milwaukee. She finished in the top six and was honored as the Fan Favorite, solidifying her reputation as a rising star in the culinary world. Michelle Wallace continues to inspire with her passion for food and dedication to her craft.
